Bidfood, the foodservice provider, has identified several key food trends set to dominate menus in 2018, as part of its new Food and Drinks Trends Guide.
The guide launches this week and contains ideas and advice on bringing the trends to life in pubs.
The main cuisines identified are:
- Middle Eastern & North African - dubbed "Morish MENA" by the guide, this reflects the growing interest in authentic global foods
- Great Britain – old favourites are cropping up on menus up and down the country, boosted by local sourcing and innovative twists on the classics.
- Asian Appetites – diners are seeking out rich, bold flavours and the traditional flavours associated with Asian food, from Japanese ramen to Korean barbecue.
Latin American and Caribbean food also get the nod, alongside modern European dishes.
Street food, all day dining and "grab and go" foods are also highlighted as key eating trends for the year.
Lucy Pedrick, insights manager at Bidfood, says: "Consumers today are being introduced to a variety of flavour and food combinations. As a result, they are becoming even more experimental and adventurous when dining out or cooking at home.
"We're already seeing brands rise to the challenge and offer on-trend bold concepts and products to delight customers and keep them coming back for more."
